Bolin Chen had completed his restaurant management degree and his apprenticeship year in a Shanghainese kitchen in Suzhou and had returned to take over the family restaurant's daily operations from his father, who was sixty-one and whose hands had begun to show the accumulation of forty years at a professional stove.

The transition was managed with the precision of a long-planned operation. Wei did not step back all at once. He stepped back meal by meal, week by week, handing the kitchen over with the same patience he had brought to every long-in-the-making thing — the restaurant's reputation, his marriage, his children's education.
